A comprehensive new review of cooking-related indoor air pollution research ranks cooking methods, oils, and fuels by how much pollution they generate — and points to ventilation as one of the biggest factors in how much of it you actually breathe.

What did researchers look at?

A team from the Chinese Research Academy of Environmental Sciences and the Chinese Academy of Sciences reviewed existing research on cooking-related indoor air pollution, comparing how different cooking methods, oils, fuels, and kitchen setups affect the pollutants released indoors, published in Frontiers in Environmental Science.

Which cooking methods produce the most pollution?

The review found a clear ranking: deep-frying and charcoal grilling produce the highest emissions, followed by stir-frying, then oven roasting and baking, then air-frying, with steaming and boiling producing the lowest emissions overall.

Does the type of oil or fuel matter?

Yes to both. Oils high in polyunsaturated fats, like soybean oil, break down faster under heat and release more airborne aldehydes, while oils higher in monounsaturated fats, like olive or canola oil, are more heat-stable and emit less. On the fuel side, the review found a hierarchy from highest to lowest emissions: traditional solid fuels like wood or coal, basic biomass stoves, then LPG and natural gas, with electric and induction cooktops generating the least combustion-related pollution.

What role does ventilation play?

A big one. Well-designed, properly vented range hoods captured over 80% of cooking pollutants in lab testing, compared to less than 30% for poorly performing systems. The review also found that recirculating range hoods, which filter and recycle air rather than venting it outside, are notably less effective at removing gas-phase pollutants like VOCs than hoods that vent outdoors.
